Mt. Rainier Chocolate




It was the day before valentine's 07 when I created this dark chocolate confection/pastry. The outer layer is tempered chocolate molded into a pyramid (thanks to ultimate kitchen shop in Seattle; http://www.surlatable.com/). Melted white chocolate is drizzled on top and a dash of powdered sugar to mimic the snowcap of Mt. Rainier. Inside is a ganache filling, layers of chocolate cake and strawberry balsamic jam.
